I would take notes by hand as I went through the lessons. Later, I would type them up because I have illegible handwriting. Plus I found typing them up re-instilled what I had learned. I recommend taking notes whether you ever return to them or not…

I think you'll be just fine with just Grad/employer LORs. You've been out of UG/grad school for several years. As long as you have 1 academic LOR, I don't think you have anything to worry about! Best of luck applying
