This is a very high STEM GPA and that speaks well of your academics. Maybe apply early because this is such a selective school, but plan for a possible retake.

Maybe email a professor, mention when you had the class with them, and ask can you go to their office hours or schedule a phone call to discuss your interest in law school and them maybe writing a letter for you?

Maybe a line like "a student I will call so-and so for reasons of confidentiality." Or (not his/her real name).

Maybe more law schools will start also accepting the GRE?

Yes, they require graduate transcripts, and yes, grad school is considered a plus. Law schools vary on their student work policies.
